Homemade Almond Milk
Once you taste this almond milk you will never use the store bought product again. My kids love this more than actual milk and go through it so fast.
Ingredients
1-1/2 Cups raw almonds 5-1/2 cups filtered water 6 dates 1 tsp vanilla A pinch of salt
Directions
Put almonds in a glass bowl and add enough water to cover the almonds by about 3 inches. Let soak for about three hours or overnight. Drain the water from the almonds and take off the outer dark skin of each almond. Put the almonds in the blender and add the 5-1/2 cups of water and blend for 3 minutes. Strain the milk from the almond pulp. I use a cotton dishtowel reserved for this purpose. They also make cotton bags to strain the milk if you prefer. Cheesecloth will be a bit too loose of a weave for this. Once all of the milk is strained add it back to the blender with the dates, vanilla, and salt and blend again for a minute or until all the dates area blended in. Store in a glass jar in the refrigerator for up to 5-6 days. It tastes great with cinnamon, nutmeg or a pinch of allspice.
